
Dh came home with a serving tray of cooked rice from an event today (also a lasagna–we ate that for dinner, yum!). About a third of it has been consumed but that’s still a lotta rice we need to eat this week. So, the menu focuses on rice. I went through my fave Indian cookbook (5 Spices, 50 Dishes) and looked around on allrecipes. This is what I came up with:
Monday: Pork Soft Tacos with the trimmings, No-Fuss Rice Pudding
Tuesday: Black-eyed Peas in Spicy Goan Curry (without the spice or the kids won’t eat it), Marathi Yellow Fried Rice (both recipes from the 5 Spices cookbook), salad
Wednesday: leftovers
Thursday: Punjabi red beans, simple cabbage stir-fry (again 5 Spices cookbook), plain white rice
Friday: Middle Eastern Rice with Black Beans and Chickpeas, salad or cut-up veggies
Saturday: kids have a pizza party, leftovers for the adults OR hamburgers, tater tots and fruit
Most of the time, I just serve fruit or we whip up fruit smoothies for dessert but the rice pudding is an effort to jump in start the rice agenda. I figure, if it doesn’t go over well, I can eat the leftovers for breakfast.
